Neapolitan pizza dough originated in Naples, Italy, in the 18th century. Traditionally, it was simple: San Marzano tomatoes, mozzarella, basil, olive oil, and long-fermented, specialised dough. Today, it is becoming the most popular style of pizza in the UK.

Our pizza dough is based on this old tradition and is cold-fermented for 48 hours to create a truly light and airy pizza. This longer ferment brings out deep flavour and is much kinder to your digestive system. Made using the highest-quality Grandi Molini Italian flour and Lievito Naturale (yeast improver), it delivers a restaurant-quality end product.

With over five years’ experience mastering the dough-making process, we have created a product that not only tastes great but is also strong and easy to stretch.

When to expect delivery

  • We dispatch orders the next working day. For Example; if you order on a Friday, Saturday or Sunday we will dispatch your order on Monday for delivery on Tuesday. (unless stated otherwise on the delivery instructions)
  • We send orders out by FedEx on a next day delivery service. The evening before delivery you will receive a email and text message giving you a time slot for delivery.
  • You will receive tracking details by text and email the day before delivery.
  • We choose the use FedEx as our parcel courier because of the great leaves of service and communication they offer. They currently have a 98% on time success rate.
  • Free delivery for all orders over £30.
  • If you would like a certain day for delivery then please put this on the 'Special Instructions' section in your basket.

What are the benefit's of a long fermented pizza dough?

1. Better Flavour. Long fermentation allows yeast and enzymes to break down starches into sugars and organic acids. The results is a much deeper, complex flavour.

2. Improved Texture & airy crust. Over time, gluten develops more naturally and produces gas bubbles.

3. Better Browning & more crisp. Improved caramelization, better blistering and more golden brown crust.

4. Easier Digestion. Breaks down some gluten proteins and reduces certain complex carbohydrates. Results in a lighter meal, less bloating and easier on your stomach.

5. Easier to Stretch. Longer fermented dough is more relaxed and doesn't snap back when opening up to form a pizza. Less resistance means the easier it is.

When will I get my order?

We send orders out on the next working day using a next-day service. For example, if you order on a Monday, we will send your order on Tuesday for delivery on Wednesday. If you order on a Friday, Saturday, or Sunday, your order will be sent out on Monday for delivery on Tuesday.

We work very closely with our chosen parcel couriers to make sure you receive your order on time. Tracking and delivery updates will be provided directly by the courier.

What to expect on delivery?

On the day of delivery, or the night before, you will receive tracking information from the courier, giving you a time window for when to expect delivery.

When your order arrives, put your dough straight into the freezer. We vacuum-pack the dough balls in fours to improve product quality and to make storage and use easier.

If you are cooking the same day, leave the dough out and enjoy. Follow our instruction guide sent with your order.

How do I defrost and cook?

All orders are sent out with detailed instructions for use. In short: if you are using the dough the same day, simply cut the vacuum packaging and place the pizza dough into a dough tray or sealed container. Leave for 3–4 hours to allow the dough to relax and come to room temperature.

If you are cooking the next day, repeat the process above but let your dough slowly defrost overnight in the fridge. You can put the vacuum bags directly from the freezer into the fridge.

What oven do I cook in?

You can cook our pizza dough in either a pizza oven or a standard domestic oven. Most home ovens reach around 250–270°C. Preheat your oven with the pizza stone or pizza steel inside for 45 minutes to ensure it’s fully saturated.

Bake your pizza at around 260°C for 5–7 minutes. For extra top char, finish under the grill.

If your oven only reaches 230°C, extend the baking time to 8–9 minutes and use the grill to increase top heat.

For best results we recommend using a Pizza Oven that can reach much higher 400-450°C temperatures. Most pizza ovens will cook our dough in just 60-90 seconds.

How much does shipping cost?

Shipping is calculated at the checkout process. However, if you spend over £50 then delivery is free!

What is the return policy?

Pizza dough is a perishable product and, therefore, we cannot accept returns. However, if in the unlikely event you are unhappy with the product or something goes wrong, please contact us.
